Risotto is one of those classic Italian dishes that everyone loves – even the kids don’t complain. Having a ‘go to’ risotto recipe can save you lots of time and effort when friends turn up unexpectedly. We aim to please at foodora so we’ve chosen some of our all time favourites for you to try at home.
The classic mushroom risotto
This mushroom risotto recipe is incredibly easy. Be sure to use good risotto rice like Canaroli or Arborio. Heat 1 tbsp vegetable oil in large saucepan add a handful of chopped spring onions and fry on medium to high for a few seconds. Add 1 crushed garlic clove and 200 g sliced mushrooms. Pour in 900 ml of hot vegetable stock, add 75 g peas and 300g rice and let your mushroom risotto base simmer till all the liquid is absorbed and the rice is tender.
Delicious chicken risotto
You can easily adapt the classic mushroom risotto recipe to a chicken risotto recipe. Or try this chicken risotto recipe with a twist. Add 2 skinless chicken breasts to 900 ml chicken stock and simmer for 8 minutes. Remove chicken and cut into bite-size pieces. Leave stock in saucepan and set chicken aside. Heat 2 tbsp vegetable oil in a large frying pan. Add 1 finely chopped onion and grated rind of 1 lemon. Cook for 2 to 3 mins. Add to stock and cook till liquid is almost gone. Add chicken and cook for another 5 mins, adding extra stock or a dash of white wine if desired. Served with shredded rocket, parmesan and a drizzle of olive oil.
Try a great vegetarian risotto recipe
Not everyone eats meat so a vegetarian risotto is a great alternative. Just add peas, beans or mushrooms to your basic recipe. Or, try this tasty pumpkin risotto. Chop 1 small pumpkin into cubes, drizzle with olive oil and roast on a baking tray in oven 180C/160C fan/ gas 4 for 30 mins. For pumpkin risotto, use the basic recipe with garlic and spring onion. When cooked add the squash, some chopped coriander and 50 g of grated parmesan – or use a vegan alternative for vegetarian risotto.
